Things You'll Need:
- 1 cup white sugar 1 egg 1 cup shortening 1 teaspoon vanilla extract 2 cups all purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon salt 2 teaspoon cinnamon 1 cup of

Step 1
Start by preheating your oven to 350 degrees.
Either grease your cookie sheets or use parchment paper. -
Step 2
In a large mixing bowl combine the shortening, sugar, egg and vanilla.
Mix together well until nice and creamy. -
Step 3
Now sift together the flour, baking soda, baking powder, salt and cinnamon.
Add the creamy mixture to the flour mixture and stir together until well blended. -
Step 4
Now open the can of pumpkin and add it into the mixture.
Stir until well blended. -
Step 5
Spoon the cookie dough onto your cookie sheets (greased or onto the parchment paper).
Bake the cookies for 10 -12 minutes. -
Step 6
Remove the cookies carefully and allow them to cool.
Once they are completely cooled you can add initials to the cookies for a personal touch.
You can really go all out here. Separate the icing and add a couple drops of food coloring to get different colors, frost the cookie with one color and monogram with another color.
You can add embellishments like silver balls or other edible decorations you can find in your grocer's baking isle. -

White butter-cream icing -
1 pound box of powdered sugar
1/4 cup milk
1 teaspoon vanilla extract
1 stick of salted butter (softened) -
Step 8
Add all the ingredients together into a mixing bowl.
Beat the ingredients together with an electric mixer for two minutes, scraping the sides of the bowl often.
If you want the icing to be a thinner consistency then add a little more milk, a little at a time. -
Step 9
Then place the icing into a piping bag and write the initials onto the cooled cookies.

You can also buy ready-made icing in the stores baking section to write on you cookies.
You can double up the cookie ingredients to make larger batches.
For the icing if you want a smaller amount cut the ingredients in half.
