Mexican Pasta Soup is a broadly popular comfort food in Mexico and is delicious and very inexpensive to make. This soup is referred to as sopa in Mexico. I've seen it in local restaurants named as Conchita Soup. It makes a delicious first course or a great accompaniment to salad.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1/4 cup canola oil
  • 1 package macaroni shells
  • 1 large can of tomato sauce or fresh Roma tomatoes
  • 1 or 2 garlic cloves
  • 1/2 onion, chopped
  • 84 ounces of chicken broth
  • Salt
  • Pepper
  • 1/8 teaspoon cayenne (optional)
  • Pinch of cumin seasoning
  • Grated cheddar cheese or any other type of cheese desired
  1. Step 1

    Chop up onions and garlic.

  2. Step 2

    Heat canola oil on stove top. Add the pasta shells and stir occasionally until they are golden brown. If desired, drain off the excess oil. Remove from heat until the other ingredients are ready.

  3. Step 3

    Blend the tomato sauce or fresh tomatoes, garlic and onions together in a blender or food processor. Add to pasta on stove top.

  4. Step 4

    Add the chicken stock to the mix and stir in well. Add cayenne, salt and pepper to taste. Turn up heat so it is hot when ready to serve. Cook until the pasta is cooked to taste.

  5. Step 5

    Serve with a handful of cheddar cheese on top.

Tips & Warnings
  • You can create your own chicken stock if you prefer. Add 1 cube of chicken bullion to each cup of water or make your own stock when you cook a chicken
  • This goes great with garlic bread
  • Olive oil or vegetable oil can be used as a substitute for canola oil
  • Vegetarians can substitute vegetable stock instead of chicken stock
