Pumpkin seeds might seem like an annoyance while you are cleaning out a pumpkin to create a jack-o-lantern. But don't throw those seeds away because they make wonderful edible treats. Pumpkin seeds can be cooked into breads, pies and made into salty snacks. Before cooking the pumpkin seeds many recipes call for the seeds to be soaked in brine--a simple mixture of salt and water.
