How to Keep Baking Tube Pans From Leaking

Tube pans are available in one- or two-piece varieties, but it's the two-piece pan that simultaneously can be a baker's best friend and enemy. Two-piece pans, which are often used to bake angel food cake, feature a removable bottom so that the cake can be extracted from the pan easily. However, this feature also makes the pan prone to leakage where the bottom of the pan meets the sides. Here is a simple way to make sure your batter is on its best behavior while you bake. Instructions

    • 1

Tear off a piece of aluminum foil about 4 inches wider than the bottom of the tube pan. Place the foil flat on your countertop.

    • 2

Set the empty tube pan in the center of the foil and firmly crimp the edges of the foil up the sides of the tube pan approximately 1 to 2 inches.

    • 3

Repeat this process to add a second layer of aluminum foil to the bottom of the pan.

    • 4

Place the tube pan on a large baking sheet to catch any small leaks that may get through the foil.

    • 5

Fill the tube pan with cake batter and bake according to the directions of the recipe you are using.

Tips & Warnings

  • If a significant amount of batter is leaking from the pan, the bottom of the pan may be warped and need to be replaced.
