How to Freeze Pancake Batter

Unless you have a big family that eats pancakes every morning, it's likely that you're going to have some leftover batter every time you cook a pancake breakfast. Well, you need not fear wasting batter; all you have to do is freeze it and it should be ready for you the next time you feel like having pancakes. Does this Spark an idea?

      Pour your leftover batter into an airtight container. As you do so, scrape the batter clinging to the sides of the bowl or blender with the rubber spatula.

      Cover the airtight container with its lid. Make sure no air can get in; freezer-burned batter doesn't taste good. Also, ice crystals may form in the container, ruining the texture of the batter.

      Place your container in the freezer. For best results, place the container in a spot where temperature fluctuations caused by opening and closing the freezer door won't cause the batter to melt and refreeze. But also try to put it where you can see the container, so you don't forget that it's there. Depending on the temperature settings of your freezer, the batter should freeze within an hour.

  • Frozen pancake batter keeps well for about a week. Any longer and your batter might not necessarily be spoiled, but the quality will decrease. Labeling the container with the date you froze the batter will help.

  • When preparing to cook pancakes again, make sure the batter is thawed completely, then stir it thoroughly to mix any ingredients that may have settled during freezing.

  • Use a bowl with an airtight lid to mix your batter, and when it's time to freeze it, you won't have to pour the mixture into a separate container; just pop the lid on.

  • Refrain from freezing the mixture in the blender pitcher you may have used to mix and pour the batter. The blender lid is usually not airtight enough, and the plastic or rubber parts of the lid may deteriorate due to the extreme temperature. Plus, you may need the pitcher for other purposes.

  • For variety, you might add chopped fruit or chocolate bits to the batter before freezing.

  • There are those who would caution against freezing pancake batter for texture and taste reasons. You might consider cooking the rest of the batter and freezing the pancakes instead.
