How to Make Ghee With Turmeric
Ghee is clarified butter made by boiling unsalted butter until the water is evaporated. Turmeric is used in Indian cooking for its earthy flavor and golden yellow color. Melt butter in the sauce pan over medium heat. As the butter melts, it will start to boil. White foam formed mostly of proteins and other solids will float to the top, and sediment will start settling to the bottom of the pan. Do not stir, but keep the butter boiling gently until the sediment is golden brown and the oil under the foam turns amber. At this point the oil should also smell like fresh-baked croissants.

Remove the pan of ghee from the heat to prevent burning. Let the ghee cool for 30 minutes, then line a strainer with some cheese cloth and strain the ghee into sterilized jars. As it cools, ghee hardens and becomes opaque and yellow. Reserve 2 tsp. for the next step.

Heat reserved 2 tsp ghee in frying pan over medium heat until ghee is melted and all cloudiness is gone.

Add turmeric powder to ghee. Mix well.

Remove frying pan from heat and allow the turmeric mixture to bubble without additional heat for 5 minutes. The mixture will be slightly darker and the scent of the turmeric will be more pronounced.

Tips & Warnings
The quality of the ghee depends on the quality of the butter from which it is made. Use fresh, organic butter if possible.
Unflavored ghee may also be purchased ready for use. For home use, turmeric ghee is generally made fresh in small batches as needed so it is at the peak of its flavor.
Turmeric ghee is a mainstay of vegetarian cooking. Try it for a quick color and flavor boost on vegetables, rice and bean dishes such as split pea soup or Indian dhal.
Turmeric ghee added to warm milk is also used to relieve aches, pain and fever.
Avoid getting turmeric ghee---or any food containing turmeric---on clothes or on plastic surfaces, as it colors everything it touches. If you get some on your clothes, pre-treat the stain to remove it before washing the garment.
