How to Make Waffle Mix
Homemade waffles may seem like a special-occasion treat, but they are relatively easy to make and can be done even on a whim. A mix of several basic ingredients can be prepared ahead of time and kept on hand for lazy Saturdays, celebratory breakfasts or even as a fancy dessert treat. For a break from Eggos and Bisquick, give the following recipe---based on Alton Brown's---a try. Things You'll Need
- 1 cup white flour
- 1 cup wheat flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 3 tbsp sugar
- Pinch of cinnamon and/or nutmeg (optional)

- Airtight container

Whisk together the flours, baking soda, baking powder, salt, sugar and any desired spices (such as cinnamon or nutmeg) in a bowl. Mix until the ingredients are well combined.

Beat three whole eggs in a bowl. Add 2 oz. of melted butter and 16 oz. of room-temperature buttermilk. Stir until ingredients are combined. Add the dry waffle mix made in Step 1.

Bake on an oiled waffle iron according to manufacturer instructions. Serve immediately.

Tips & Warnings
If you aren't going to make the waffles right away, place the mix in an airtight container and store at room temperature for up to one month. The waffle mix can also be stored in the freezer for up to three months.
The above recipe serves 3 to 4 people and makes approximately six 8-inch waffles.
For a variation on this waffle mix, add finely chopped toasted nuts, dried coconut or lemon zest.
