How to Cook Shrimp and Rice with Sauteed Tomatoes and Garlic

This is a super easy and fast shrimp dinner. Step by step, you can make it all in one skillet and it feeds 8 with leftovers! Go down the grocery list and have everything in the pantry or freezer and you'll be able to make this quick family dinner that will satisfy a crowd! Serve it with garlic bread, slices of tomato pie, or fresh french bread with soft butter and this meal will become a family favorite!

Instructions

Things You'll Need:

  • 1 pound of cooked and peeled small shrimp FROZEN
  • 3 pouches of Uncle Bens cooked rice (in microwavable pouches)
  • 1/2 stick salted butter
  • 1 pint of grape tomatoes, ripe and diced
  • 3 tablespoons minced garlic
  • 1/2 c. olive oil
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • salt and pepper to taste
  1. Step 1

    Start with a large skillet. In the skillet begin to saute your diced grape tomatoes in olive oil. As they cook down, smash them with the back of a spatula so that they begin to form a sauce.

  2. Step 2

    Now, add your minced garlic, herbs, butter and frozen shrimp. As the shrimp thaw they will give off a lot of liquid. Do not drank this off. You'll need all of the liquid at the end when you add the rice.

  3. Step 3

    Finally, add the 3 pouches of cooked rice to the skillet and stir over medium heat. Now, test for flavor and add salt and pepper to suit your taste!

  4. Step 4

    Serve with any kind of bread that you like and you have a hearty meal for 8!

Tips & Warnings
  • This dish could also be served with a salad.
  • This dish also freezes well!
