Things You'll Need:
- 2 Egg Yolks
- 1 Tablespoon Lemon Juice or Vinegar
- 1/2 Cup Oil
- 1/2 Teaspoon Salt
- Food Processor or Mixer

Step 1
Separate the egg yolk from 2 eggs and put them in your food processor or mixing bowl.

Add 1 Tablespoon of Lemon Juice or Apple Cider Vinegar.

Thoroughly mix the egg yolk with the lemon juice or vinegar.

This is where the trick comes to play. Slowly add your oil and I mean slowly. Put in a slight drizzle (a few drops) at a time. Mix thoroughly before you add a few more drops. Keep doing this until the mix begins to thicken. This is called emulsification.

Once the mix starts to thicken you can add the rest of the oil. Don't dump it in but combine it by using a slow constant drizzle until the mix gets almost as thick as you want it.

Step 6
Test it. Give it a little taste and add more salt, vinegar or any other spices you like.
If you want to make salad dressing add powdered sugar, paprika, and garlic powder. -
Step 7
Step 7: Add more oil until your mayonnaise becomes the desired thickness.
Peanut oil and canola oil both make great tasting mayonnaise and are healthy. Olive oil is also a great choice. You can also mix oils and blend to your own taste.
You can do the same thing with the vinegar, lemon, and lime juice.

on 12/5/2009 I think I would be scared to try this recipe. I'm very picky with my mayonaise and only like Hellmans myself. (I wouldn't even trust it being made by my own hand) But maybe I should try this and get back to you. Thanks for the article.
