How to Make Leftover White or Sweet Potato Gnocchi

This pasta dish is made from scratch, but is still quick and easy and a great way to make use of leftover potatoes that you may have after a big dinner. Gnocchi is usually served as a satisfying side dish. But you can also drop the dough into soups and stews as you would with noodles, since it cooks in a short time.

Instructions

Things You'll Need:

  • 2 leftover cooked white or sweet potatoes
  • 2 cups flour
  • 1 egg
  • 1/2 tsp salt
  1. Step 1

    Remove the skins from the potatoes, then mash them well. Mix in the salt and the egg. Blend in the flour slowly to form a soft dough.

  2. Step 2

    Boil lightly salted water in a large saucepan. Sprinkle some flour on a
    counter or table surface and roll the dough out into several long, thin strips. Then cut the strips of dough into smaller bite-size pieces. Drop the pieces of dough into the boiling water; cook the pieces until the gnocchi float to the surface of the boiling water.

  3. Step 3

    Remove the gnocchi fromwater's surface with a strainer or a large spoon; put the gnocchi in a covered dish and serve it with gravy or with a sauce such as alfredo or marinara.
