Step 1
Put the chocolate in a microwaveable bowl, and heat for 30 seconds. Remove and stir. Repeat until the chocolate is melted.
To use a double boiler (or metal bowl and pot), bring water to a boil, remove from heat. Place the chocolate in boiler top or bowl over the water and stir until melted. -
Step 2
Fill the flower cavities with melted chocolate. Tap the mold gently against the counter top to bring any air bubbles to the surface. Carefully lift a clear mold, and check the bottom of the cavity for any trapped air bubbles.
If you are using a flower lollipop mold, insert the sticks, and roll them so the ends are covered with chocolate. -
Step 3
Place the mold in the refrigerator to cool. Completely cool chocolate releases from the mold easier and will not be damaged. Flip the mold onto a clean kitchen towel or paper towels to release the chocolate.

Make colored flowers by using colored candy melts. Paint the mold with non-shed paint brushes or toothpicks and a thin layer of chocolate for two or more colors for the flower. Remember the bottom of the mold is the top of the finished flower. Use a toothpick to pop any air bubbles. Cool the chocolate completely to be sure the next layer won't mix colors.

Fill the cooled cavity with melted chocolate and tap to remove excess air bubbles. Do not stir the chocolate in the cavities since the warm chocolate will soften what is already in the mold. Place in the refrigerator and cool completely. Unmold and decorate your cake.

Choose colors for the flowers from the gumdrops. Set aside green ones for leaves and stems.

Carefully slice gumdrops into thin petal slices. Using a complementary colored gumdrop, make one slice slightly thicker than the petal slices. Place this gumdrop as the center of the flower. Arrange the petal slices from the first gumdrop around the center. Petal slices can also be cut into pointed slices if you wish, as for a poinsettia.

Cut the green gumdrops into slices. Cut these slices into leaf and stem shapes and place around gumdrop flowers.

Trace your flower outline in black or dark blue marker to be sure it can be seen through the wax paper. Place a piece of wax paper over the flower outline. More simple flowers do better with this method. Tape the two pieces of paper together. You can also do simple leaves with plain or green chocolate to accentuate the flowers.

Fill a zip-top bag with melted chocolate. Snip one corner to make a small hole. Holding the chocolate bag in one hand, gently squeeze a small amount of chocolate out of the hole. Do not push too hard or the bag may burst.

Trace the flower pattern with the melted chocolate. Make the lines of chocolate thick enough they won't crumble when cooled. Colored flowers can also be made by using different colored candy melts and adding the colors one at a time. Pop any bubbles you see with a toothpick.

Place in the refrigerator to cool completely. Peel the flowers and leaves carefully away from the wax paper and place on a clean, flat surface. Decorate your cake with your flowers and leaves.
