How to Separate Cinnamon Bark
Cinnamon bark is harvested from the "cinnamomum zeylanicum" tree, native to Sri Lanka. Cinnamon trees can grow up to 60 feet high, though trees for commercial use are usually trimmed to a smaller height for an easier harvest. A healthy cinnamon tree can produce cinnamon bark for about 45 years. Harvesting cinnamon bark is traditionally done by Sri Lanka natives, as growing cinnamon trees in other places is difficult. Trim several new, soft shoots from the cinnamon tree. The bark on the shoots should be brown but still pliable.

Cut off all leaves and twigs from the shoots. Roll each shoot firmly between your hands to loosen the tough outer bark.

Cut the outer bark of each shoot in long, vertical lines. The bark should start to peel away from the shoot on its own; peel off all of the outer bark and discard.

Pour about two inches of warm water into a plastic tub and soak the peeled shoots. This will help loosen the inner bark and make it easier to peel away.

Score the inner bark of each shoot in a single, vertical line. The inner bark will be brown and gritty. Be careful not to cut into the core wood underneath, which is not good to eat.

Put the tip of the knife under the edge of the score and slide it down the shoot, loosening the edge of the bark. Lift the loosened edge with your fingers and slowly peel the bark from the shoot.
