If you love potatoes and are faithful when it comes to vegetable salads, you are sure to be a chunky potato salad lover. Chunky potato salad is just what its name implies; it has chunky pieces of potatoes mixed with salad dressing and other vegetables. It takes only 45 minutes make, including preparation time.   • 4 large potatoes
  • 1 cup mayonnaise
  • 1 cup pickled radish
  • 1 tsp. mustard
  • 1 egg, boiled
  • salt
  • pepper
  • 1 tsp. sugar
  • paprika

Instructions

      Peel the potatoes and cut them into chunky squares. Wash the potatoes.

      Put the potatoes in a pot of boiling water, cook until tender. Do not allow the potatoes to get soggy. Sprinkle salt into the boiling water.

      Drain the water, and put the potatoes in a large mixing bowl. Let the potatoes cool for 10 minutes.

      Add mayonnaise, mustard, radish, chopped boil egg and sugar and mix together. Sprinkle the paprika on top, let chill and serve.
