Things You'll Need:
- 2 large delicata squash
- 1 cup of brown rice
- 1 medium onion
- 2 cloves garlic
- 1/2 tsp curry
- 1/4 tsp cinnamon

Step 1
Cut squash lengthwise and place with cut side down on cookie sheet. Bake at 400 degrees for about 20 mins or until knife easily pierces the squash.

Step 2
Cook 1 cup of brown rice in 2 and 1/4 cups of water for 45 minutes.

Dice a medium onion and 1/2 red bell pepper either by hand or with a mini food processor. Saute the onion, red bell pepper, and 2 cloves of crushed garlic in 1 tbsp of olive olive oil until done adding in curry powder and cinnamon toward the end.

Step 4
Add mixture above to the rice mixture and stir until combined.

Step 5
Stuff the delicata squash with the rice mixture and you are ready to serve.
