A couple of years ago, I came across this recipe, I modified this recipe to my own liking and would like to share my version of this tasty and healthy soup with you.

I make this soup about six times a year, every couple of months or so (always on a Sunday) so that I can eat it during the following week. It has a very low calorie intake.

If you enjoy veggies and broth, this soup is for you.

Instructions

Things You'll Need:

  • 1 large head of
  • cabbage (used only ½ of the head)
  • 2 medium-sized tomatoes
  • 1 large green pepper
  • 1 large onion
  • 4 stalks of celery
  • 2 large carrots
  • 2 ½ cups green beans
  • 32 oz. package of beef broth (Swanson)
  • 1 pkg. onion soup (Lipton)
  • 4 cups of water
  • 1 tbsp. parsley
  • 1 tbsp. oregano
  • 2 tbsp. garlic powder
  • colander
  • cutting board
  • 6 qt. stock pot
  1. Step 1
     

    Using a colander, wash all veggies thoroughly and cut them(cabbage, tomatoes, green pepper, onions, celery and carrots) into small bitable pieces. Place all veggies in a stockpot and cover with water.

  2. Step 2
     

    Let the veggies cook over medium heat for about 20 minutes.

  3. Step 3

    Reduce the cooking heat and add remaining ingredients (green bean, beef broth, onion soup mix, parsley, oregano, and garlic powder). Let the soup simmer for 20 minutes.
