Beef brisket requires a long cooking time, but it is worth the wait. To cook a juicy brisket, grill it low and slow indirectly over a bed of smoldering charcoals. Add wood chips to the charcoals to give the beef brisket a smoked flavor. Once the brisket is on the grill, you can sit back and relax as the grill takes care of all the work. Instructions

    • 1

Tenderize the brisket with a meat tenderizer. This will allow the marinade to soak into the brisket, and it will help reduce the toughness of the beef.

    • 2

Use your favorite marinade for the beef brisket. Place the brisket in a zip-top bag and pour the marinade over the beef. Allow the beef to marinate in the refrigerator for 12 hours.

    • 3

Prepare the grill before removing the brisket from the refrigerator. Clean the grill grates with a grilling brush. Begin burning the charcoal.

    • 4

Allow the charcoal to burn for at least 30 minutes before setting the brisket on the grill. Remove the brisket from the refrigerator.

    • 5

Move the charcoal to one side of the grill. The brisket needs to cook over indirect heat. Ensure that the grill temperature is at least 250 degrees.

    • 6

Place the brisket on the side of the charcoal grill that does not contain the burning charcoal. Grill the brisket for two to three hours. Grill the brisket for 1.5 hours for each pound of beef. Carefully turn the brisket over once it is halfway cooked.

    • 7

Continue to add coals to the fire when the temperature of the grill falls. Remove the brisket once its internal temperature is 185 degrees.

    • 8

Wrap the brisket in aluminum foil. Place the brisket in an ice chest for 30 minutes. This will lock in the juices and provide you with tender, juicy beef.

    • 9

Serve the brisket. Cut the brisket across the grain for even pieces.

Tips & Warnings

  • Spray the brisket with water every half hour to keep it moist.

  • Brush your favorite barbecue sauce over the brisket during its last hour of cooking to make a barbecue brisket.

  • Trim the fat from the brisket before grilling the beef, but leave at least one-fourth of an inch of the fat to protect the brisket while it grills.

  • Do not let the brisket sit out at room temperature longer than two hours to prevent a food borne illness.

  • Always wash your hands before and after handling raw meat.
