Step 1
Gather and prepare the following items for the fried pumpkin donuts recipe:

* 3/4 cup fresh pureed and cooked pumpkin, or canned chunk pumpkin
* 4 cups all-purpose flour
* 3 teaspoons baking powder
* 1 teaspoon baking soda
* 1/4 cup whole milk
* 1/4 cup butter or margarine, softened
* 1 cup brown sugar
* 2 large eggs
* 1 teaspoon vanilla extract
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 1/4 teaspoon ground ginger
* 1/4 teaspoon ground nutmeg -
Step 2
In a medium bowl, mix flour, baking soda, baking powder, nutmeg, cinnamon, ginger and salt.

Cream with an electric mixer on medium speed the butter (or margarine) and sugar in a mixing bowl. Gradually beat in eggs, beat well before each addition. Blend until smooth and butter is fully integrated into the mixture.

Drain and then mash the canned pumpkin with a spoon, if using. In a medium bowl, add vanilla, plus milk into pumpkin puree or mashed canned pumpkin.

Blend half of the dry ingredients (in Step 2) to egg mixture (in Step 3), and then add pumpkin mixture (Step 4). Lastly, add the remaining Step 2 dry ingredients to the mixture; Beginning and ending with Step 2 dry ingredients. Cover dough and place in the fridge 1 hour or longer, up to 4 hours.

Lightly flour a work surface. Roll out pumpkin donut until about 1/3" thick. Cut with a 3" donut cutter or with something similar to form round shapes. Collect the donut holes and roll them out to make 1 to 2 more donuts following the steps, or, roll them into balls and fry them separately.

Heat 4 cups vegetable oil until very hot in a deep frying pan over high. Use a wire strainer if you have one. Fry the pumpkin donuts 3 or 4 at a time in the hot oil using strainer. If you want to fry the donut holes, fry half of the amount at a time in 2 batches until golden brown.

Step 8
Fry pumpkin donuts until golden brown on all sides and then transfer to paper towel lined plate to drain. Enjoy pumpkin donuts warm.
Yields: 18 donuts and 18 donut holes, or, 19 to 20 donuts (no donut holes).
