Things You'll Need:
- 1 pound glazed cherries
- 1 pound mixed peel
- 1 pound blanched almonds
- 1 pound bleached sultanas
- 1/2 cup candied pineapple
- 1/2 cup coconut
- 2 3/4 cups all-purpose
- flour
- 1 teaspoon baking powder
- 1 teaspoon nutmeg
- 1 cup butter, soft
- 1 cup granulated sugar
- 3 eggs
- 1/2 cup tepid water
- 1 1/4 teaspoons almond extract

Step 1
Line your pans with tin foil. Fold the corners gently inward so there are no tears or wrinkles.

Pick over your raisins to make sure there are no stems.
Halve your cherries and slice your pineapple thinly.
Mix together the fruit, mixed peel, almonds, and coconut.
Heat oven to 275 degrees. -
Step 3
Mix together your flour, baking powder, and nutmeg.
Stir about 1 cup of the flour mixture into the fruit mixture to make sure no fruit is clumped. -
Step 4
In a large bowl blend together the butter and sugar. Beat the eggs well and add to the butter mixture. Beat well.

Add the remaining flour mixture, alternately with the tepid water, to the butter mixture. Add the almond flavoring. Beat the mixture well.

Add the fruit mixture to the flour mixture and blend thoroughly.

Pour mixture into prepared pan or pans. Two cakes will take approximately three hours to bake. Baking time will depend on size and shape of pans so check often. Test cakes by pressing with finger. When they feel firm to the touch they are done.

Place cakes on rack and cool completely. Wrap tightly in foil to store. Enjoy!
