How to Use a an Infared Charbroil Gas Grill
Char-Broil gas grills equipped with infrared burners can heat up in less than half the time as a conventional gas grill, reaching temperatures approaching 700 degrees, compared to the 450 to 500 degrees most grills can produce. The result is a burner that can cook food in a fraction of the time of a normal grill, locking in the natural juices in a cut of meat. Because of the speed an infrared burner can cook food, it's worth learning a bit about these high-temperature burners so those expensive steaks get to the dinner table, rather than being burned to a crisp. Turn the knob on the side of the propane tank conterrclockwise to release gas to the Char-Broil grill.

Push in and turn one of the burner control knobs while pressing the ignition button at the same time, which will light the grill.

Turn the control knobs for the infrared burners to high.

Close the Char-Broil grill cover to heat up, which will take about three minutes.

Place steaks directly on the infrared burners, close the grill and allow to cook for one minute.

Turn the steaks over and cook for one additional minute, when the meat will be cooked rare.

Turn on one of the regular stainless steel burners using the control knobs on the front panel if you wish to cook the steaks beyond rare.

Transfer the steaks to the cooking grate over one of the regular burners to continue grilling the meat. The initial two minutes of cooking time over the infrared burners seals in the juices, although the meat will char rapidly if left over infrared burners on high heat. This is why it is wise to transfer the steaks to one of the regular burners for more controlled cooking at lower temperatures.

Cook steaks another two minutes on each side for medium-rare or three minutes more on each side for medium.

Transfer the steaks to a serving platter and allow the meat to rest for two minutes before serving. The rest period allows the natural juices to flow back through the meat after retreating to the center from the high heat of the infrared burners.

Tips & Warnings
Foods that require longer cooking times, such as chicken, can be grilled on the infrared burners when set to medium and monitored every 10 minutes.
