Sesame sticks are like little crunchy bites of umami, each one containing a spectrum of taste sensations to pleasure the palate. Comprised of a basic lean dough seasoned to taste and brushed with sesame oil, sesame sticks make baking a pleasure, especially if you use a prepared flour, such as all-purpose baking mix. Baking mix has all the leavening agents you need to make to make crisp little batons with just enough rise to retain the satisfying crunch.
Things You'll Need
- Parchment paper
- All-purpose baking mix
- Spices, such as turmeric and garlic (optional)
- Sesame oil
- Toasted sesame seeds
Heat the oven to 425 degrees Fahrenheit. Line two baking sheets with parchment paper.
Add 3 parts baking mix to a mixing bowl and mix in spices, such as garlic powder and turmeric, if desired. Whisk 1 part water into the baking mix until it's free of lumps.
Adjust the consistency of the dough with baking mix if it feels loose. Chill the dough in the refrigerator for 30 minutes, covered in plastic wrap.
Roll the dough out onto a floured surface into a 1/8-inch-thick rectangle using a rolling pin. Cut the dough into 3/4-inch-long, 1/4-inch-wide strips using a pastry wheel.
Arrange the strips 1/2-inch apart on the baking sheets and brush regular sesame oil over them. Sprinkle toasted sesame seeds over the dough.
Bake the sesame sticks until golden brown, about 10 to 15 minutes. Store sesame sticks in an airtight container up to 2 days at room temperature.
