How to make quick Thai seafood pudding

This recipe is one of the few reverse-engineerings I've ever done. I had a dish like this in a Thai restaurant in Hong Kong and have forgotten its name (let me know if you know it). It seemed like it would be easy to make, so I tried it when I got home. The results were reasonably like the restaurant dish. I even tried it at a dinner for a friend's former boss, and he thought it was a great gourmet item. But it's really just a quick and easy entree that even I can make. You can probably substitute shrimp or other seafood for the imitation crab. And if you don't like some of the vegetables, you can probably substitute for them too! The coconut milk comes in a can, and is usually available in the ethnic foods section of your supermarket.

Instructions

Things You'll Need:

  • 1 pkg (~ a pound) of imitation crab legs
  • 1 bell pepper
  • 1 tomato
  • 1 small onion
  • 1 can coconut milk
  • 1 tbs cornstarch
  • spices to taste: coriander, pepper, cumin, turmeric, cinnamon
  1. Step 1

    Cut bell pepper, tomato and onion into quarter-inch pieces. Steam them in a covered saucepan (with water just covering the bottom of the pan) on medium heat for 2-3 minutes, stirring occasionally. Cook until vegetables soften slightly.

  2. Step 2

    In another saucepan, warm the coconut milk and crab legs on low heat. Stir in cornstarch and spices, then add the steamed vegetables. Cook for ~5 minutes or until sauce begins to thicken.

  3. Step 3

    Serve over rice or noodles.
