Freeze scarlet runner beans as soon as possible after you pick them. If you're unable to freeze them right away, they can be stored in the refrigerator for a few days. Don't wash the beans until you're ready to freeze them.
-
2
Split the bean pods open and remove the beans. Wash the beans in cool, running water and let them drain in a colander.
-
-
3
Bring a large saucepan full of water to a rolling boil. While the water is boiling, fill a large bowl with ice water.
-
4
Put the beans in the boiling water, and put the lid on the pot. Set a timer for three minutes as soon as you put the beans in the water.
-
5
Remove the beans from the heat as soon as the timer rings. Pour them into a colander to remove them from the hot water, then put them in the bowl of ice water immediately. Leave the beans in the ice water for three minutes, adding ice to cool the beans quickly.

6
Put the beans back in the colander and let them drain thoroughly. Divide the beans into serving-sized portions and put them in zip lock bags. Label the bags and put them in the freezer immediately.
