How to Barbecue Salmon on a Cedar Plank

Barbecuing salmon on a cedar plank is a popular option that allows you to cook the fish completely without drying out the delicate flesh. The water from the soaked planks keeps the fish moist as it cooks, while the smoldering cedar wood infuses the salmon with a smoky barbecue flavor.

Instructions

Things You'll Need:

  • Cedar plank
  • Water
  • Condiments/toppings of your choice
  1. Step 1

    Use cedar planks that are about 1/4-inch thick. If they are too thick, they will not absorb moisture well; if they are too thin, they will dry out and burn too quickly.

  2. Step 2

    Place a plank in water for at least 12 hours. You can soak it in a bucket or in your sink. You may need to weight the plank to hold it under water while it soaks.

  3. Step 3

    Preheat your grill to a medium-to-high heat (about 400 degrees).

  4. Step 4

    Remove the plank from water and place the salmon on it without drying it off. Dress or marinate the salmon according to your recipe or preferred cooking method.

  5. Step 5

    Place the plank with the salmon on the center of the grill and close the lid. Cook about 20 minutes, turning and dressing the fish as necessary throughout the course of the cooking process. The flesh should flake cleanly when the salmon is cooked properly.

  6. Step 6

    Transfer the salmon to a platter to serve, or for a more rustic feel, leave the salmon on the plank to serve it.
