Step 1
Gather and prepare the following items for the cinnamon peach torte recipe:
* 1 cup softened butter
* 1-1/2 Cups packed brown sugar
* 2 eggs
* 1 cup buttermilk
* 4 medium peaches, peeled and chopped [drain syrup/water if using canned (about 2 cans). Thaw before using, if frozen (1 pound; 16 ounces)]
* 1/4 cup white sugar
* 1-1/2 teaspoons ground cinnamon
* 1 teaspoon pure vanilla extract
* 2 cups flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt -
Step 2
Grease with cooking spray or lightly flour a 9" x 13" baking pan. Set aside. Preheat oven to 350°F.

Beat butter and brown sugar with an electric mixer on high speed in a large mixing bowl. Beat until fluffy and light.

Step 4
Fold in the eggs one at a time to the above mixture, beating before adding next addition. Next goes in the vanilla extract. Stir in the peaches with spoon (do not use mixer). Pour the batter into the prepared pan.

Mix cinnamon and sugar in a small bowl, sprinkle cinnamon mixture over the batter.

Bake at 350°F for about 45 to 48 minutes or until a toothpick inserted near the center comes out clean. Cool cinnamon peach torte on wire rack in the pan before slicing to serve.
