Things You'll Need:
- Bacon (or lard)
- Milk
- flour

Step 1
I generally fix gravy with biscuits and bacon. You can use lard if you don't mind having to seasoning your gravy.

The first thing you will want to do with this recipe is to turn your eye on high with an iron skillet or a pan that is similar like non-stick. Do not add butter or pam spray as you will have enough grease from the bacon.

If you don't want a lot of grease then just use 3-4 pieces of bacon strips and cook them to your liking. I generally use about 8 pieces then use what I don't eat later in the week in an omlet.

The next thing would be to set your bacon aside is a plate. Put a couple of paper towels in the plate to catch the greese.

If you want to drain some of the greese this is when you will do it. After draining and leaving what grease you would like in the pan, you will need to add flower. If you want white gravy you need to add about two tablespoons maybe three depending on how white you would like it to be. if you want brown or dark gravy then take a tablespoon of flour. Let your flour boil in the grease while at the same time, you will be stiring the grease and flour mix in to keep the flour from sticking to the bottom. it's like boiling water and adding something to it, but you're using grease.

The final step would be to add your milk. You only need to add the milk that you want for the size pan you are using. If you need a lot of gravy then use a lot of milk. Usually in an iron skillet that is like 8 or 9 inches round then you'll need between 2-4 cups of milk. It really just depends on how much gravy you would like to have. the less flour in your grease the runnier your gravy will be as well. if you want thick gravy make sure you put enough flour in it to where the grease and flour and boiling good together not one over powering the other.

Next, you will want to bring the gravy mixture to a boil. If you used lard in the mix instead of bacon then this is where you will want to add your seasoning like salt and pepper. if you used bacon do not add salt the bacon has enough salt that you do not need to add any seasoning.

Next, you will let the boiling gravy (stirring occasionally) you will let the flour set up so the gravy will thick. After bringing to a boil, let simmer. Turn your eye off and let it finish cooking.
Keep stirring occasionally for about 10 minutes. Let stand until desired thickness.
