How to Turn Four High Energy Foods into One Delicious Snack

Standard healthy snacks can be outright boring. They can also be difficult to prepare or have at the ready for when an energy boost is needed. This recipe combines four high energy foods to create one easy snack that doesn't need cooking.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup whole shelled almonds
  • 1/4 cup of shelled sunflower seeds
  • 2 oz. organic dark chocolate
  • 1/4 cup of virgin coconut oil
  • Mixing bowl
  • Spatula or mixing spoon
  • Blender or food processor
  • Knife or food chopper
  • 6x8" pan
  1. Step 1

    Process almonds and sunflower seeds in a food processor or blender to a fine powdery consistency or just until the almond meal starts to stick together. Scrape into container and set aside.

  2. Step 2

    Finely chop organic dark chocolate into small pieces. Chocolate bars cannot be soft or they won't chop well. If chocolate is too soft, refrigerate briefly and then chop to desired consistency.

  3. Step 3

    Mix almond sunflower meal and dark chocolate in a bowl. Stir well with a spoon or spatula.

  4. Step 4

    Add virgin coconut oil and mix until all ingredients are blended and sticking together. The mixture will be crumbly textured.

  5. Step 5

    Place almond mixture in non-greased 6x8" pan. Press down firmly on entire surface. Put pan in refrigerator and cool until hardened.

Tips & Warnings
  • This high energy snack can be crumbled and added to plain or vanilla yogurt or ice cream. Or it may be cut into chunks and used as energy pick-me-ups as needed throughout the day.
