1
Pick a large bowl full of apples from an apple tree and them by hand. You may also use store-bought apples. Be sure you only use the winter and fall varieties because the green and summer do not contain enough sugar to make apple cider vinegar. Use a juicer to juice the entire bowl of apples into a large container.

2
Strain the pulp from the apple juice by setting a strainer in a large container and pouring the apple juice slowly through the strainer and into the new container. Discard contents of the strainer.

3
Pour the apple juice into glass containers, filling each container approximately three-quarters of the way. Leave lids off the containers and let them sit to ferment in a temperature of around 80 degrees, out of direct sunlight. If desired, cover the containers with cheesecloth. Let sit three to four weeks, but be sure to stir daily.

4
Sample to test strength of the vinegar. When the vinegar reaches the desired strength, filter it by running the vinegar through a coffee filter to remove the "mother of vinegar" and keep the product from fermenting further.
-
5
Heat the vinegar in a pot on the stove to around 140 degrees but no higher than 160. This will pasteurize the vinegar so that it will last indefinitely. Pour the vinegar into sterile glass containers with lids and store at room temperature out of direct sunlight.
