How to Assemble a Chafing Dish

A chafing dish is an arrangement of pans designed to keep food warm without burning it. Most chafing dishes are made up of a smaller pan inserted into a larger one which contains water. An external fuel source heats the water, warming the food without placing it directly over the flame. Chafing dishes are often used by caterers and can range from fancy models to very simple designs.   • Metal chafing dish frame
  • Deep hotel pan
  • Shallow hotel pan
  • Chafing dish lid
  • Canned cooking fuel

Instructions

    • 1

      Place the metal frame on the table where you will be arranging your buffet. Lower the deep hotel pan into the metal frame so that it rests on the frame without touching the table. Pour about an inch of hot water into the deep hotel pan, and then set the shallow hotel pan inside the deep one. It should lie about two inches above the level of the water.

      Put the food you will be serving into the shallow pan. It should be hot enough to serve before you put it into the pan. Cover the food with the lid.

      Remove the lids from two cans of heating gel. Slide the cans into the round spaces on the frame located under where the deep pan is resting. There should be enough room under the pans to slide the cans into place, and also to light them. Light the heating gel with a barbecue lighter.

Tips & Warnings

  • Check the water level periodically to make sure it isn't evaporating. Add more, if needed.
