When you grab or hang your hand on a man's shoulder, this conveys buddy-hood or pal status. He may want a buddy or pal in his significant other; if you do too, that's great. But if your intent is to convey something more intimate, avoid it.

Hold or Caress His Hand:
Both of these gestures convey intimacy. But if you're on a first-date, it may be too much, too soon: it can convey a sense of "commitment" and "trust" to a man, which if done prematurely, can read as clingy and overly-familiar, and just plain freak him out.
