1
Scrub the potatoes vigorously under cool running water with the abrasive side of a clean kitchen sponge.

3
Scrape the shavings into a large bowl and mix with seasoned salt and pepper. While the amount of seasoning is up to you, a quarter- to half-teaspoon of each should suffice.
-
4
Fill the bottom of a skillet with a thin layer of cooking oil and place over medium heat.
-
5
Scoop two spoonfuls of potato shavings into the skillet and flatten into two patties with a spatula. For larger patties, use three to four spoonfuls.

6
Allow the patties to fry on one side for 10 minutes or until evenly browned. Flip with a spatula and fry for another 10 minutes.
-
7
Remove the browned patties and place on a plate covered with several paper towels to collect excess oil.
-
8
Repeat until you've made the desired amount of hash brown patties, or until the potato shavings have been used up.

Tips & Warnings
Recipe serves four. If you'll be serving more people, increase your potato count by one per person.
If oil begins to deplete after several patties, add more.
A single onion can be diced and added to the bowl in Step 4.
Serve with ketchup, hot sauce or the dressing of your choice.
Avoid frying your hash browns on high heat, which may cause the oil to splatter.
Do not leave a hot skillet untended on your stove top.
