This chilled soup makes a delightful, light summer lunch. It takes advantage of summer vegetables and makes a refreshing meal at noon or a nice lead-in to an evening meal.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup milk
  • 3/4 cup plain yogurt
  • 1/4 cup mayonnaise
  • 1 cup chicken broth
  • 2 large black avocados
  • 1 package Hidden Valley Original Ranch Salad Dressing Mix
  • 1 tomato
  • 1/2 unpeeled cucumber, diced
  • 1/4 cup diced purple onion
  1. Step 1

    Gather all the ingredients. Dice the tomato and the unpeeled cucumber and the 1/4 cup of purple onion and set these three items aside. Peel one avocado. Cut it into chunks for the blender. Don't peel the second one until you are ready to serve the soup.

  2. Step 2

    Put the 1 cup of milk, 3/4 cup of plain mayonnaise, 1 cup of chicken broth, the chunks of avocado and the package of salad dressing mix into the blender. Puree until they are smooth.

  3. Step 3

    Pour the blended soup into a large covered bowl. Stir in the diced tomato, diced cucumber and diced purple onion. Store this covered in the refrigerator for a few hours to chill. This allows the flavors to blend.

  4. Step 4

    When ready to serve the soup, put it in bowls. Peel and slice the avocado. Place these slices on top of the soup for garnish.

Tips & Warnings
  • I like some freshly ground pepper on the soup too.
  • This keeps for several days in the refrigerator.
  • To minimize the calories, use light yogurt, skim milk and light mayonnaise.
