Step 1
Ingredients
1 cup sliced canned beets, chopped and drained, reserve 3/4 cup juice
1 cup boiling water
2 teaspoons onions, chopped
3/4 cup celery, chopped
1 tablespoon horseradish
3/4 cup beet juice
1/2 teaspoon salt
Small package lime Jello
3 tablespoons wine or balsamic vinegar -
Step 2
Directions
Dissolve Jello in cup of boiling water. Pour into one quart glass bowl or mold and set aside to cool (approximately ten minutes) Add remaining ingredients and stir to blend. Place in refrigerator until set. Serves 4. -
Step 3
To serve, un-mold onto a plate of salad greens. Garnish with sprigs of parsley or and cherry tomatoes. For a spoon on dressing, add a tablespoon of dry vegetable soup mix to 1/2 cup mayonnaise or sour cream and place a dollop on the side of each plate if served on individual salad plates. Enjoy!
