If you like Oriental dishes and Jello too, why not combine the two in an easy to make, attractive and budget friendly Oriental Jello salad? This article will tell you how.

Difficulty: Easy
Instructions
  1. Step 1

    Ingredients:

    1-2/3 cup water
    3/4 teaspoon salt
    2/3 cup quick cooking rice
1 small package Jello orange pineapple or orange gelatin
    1 cup boiling water
    1 tablespoon soy sauce
    1/3 cup mayonnaise
    1 tablespoon wine vinegar
    3/4 cup finely chopped ham
    1/2 cup bean sprouts, drained
    2 tablespoons sliced water chestnuts
    1/4 cup finely chopped celery
    1 tablespoon finely chopped scallions
1 large can sliced pineapple slices, drained

  2. Step 2

    Directions:

Bring 2/3 cup water and 1/4 teaspoon salt to a boil in saucepan. Stir in rice, cover, remove from heat and let stand for 5 minutes. Spread rice out on a baking sheet and place in refrigerator to chill. Dissolve Jello mix in 1 cup boiling water. Stir in 1 cup room temperature water and place in refrigerator to chill until very thick. Combine 1/2 teaspoon salt and remaining ingredients, except pineapple. Then add rice and mix well. Pour 1 cup of the gelatin into a one quart mold or glass bowl. Top with pineapple slices. Add remaining gelatin to rice mixture and pour into mold. Chill until firm.

  3. Step 3

To serve, un-mold onto a plate of salad greens. Garnish with sprigs of parsley and Mandarin orange sections. Serves 4. Add to the Oriental flavors by mixing a small amount of Teriyaki sauce into 1/2 cup of mayonnaise that can be spooned over individual servings as desired. Enjoy!
