Gather thoughts on what the theme of your restaurant will be. Try to project how much space you will need for this idea. Also, think about how much seating will be needed in the dining room, as well as the bar area. (If you plan to have a bar area.) You will more than likely need to check out other restaurants in the area and confer with their owners or managers. Do your own research about demographics and household income of the area. This will aid in projecting demand for a new restaurant

Sketch a draft of what you would like to see in your restaurant's dining room, bar, and kitchen. Do this on separate pieces of paper. You are not looking for a final draft, just a quick brainstorm.

Begin to combine your ideas. As you begin to combine, there are several things about laying out a restaurant that are crucial to the long-term success and longevity of your business. First, if possible, your kitchen should be in or near the center of your space. The kitchen is the heart and soul of a great restaurant and needs to be accessible by the staff. Next, your bar area should also be close to the center of your space.

Step 4
Think in terms of steps. The more steps the service staff takes, the longer the guests will wait. If you can reduce the number of steps the staff will take, do. This includes less hall space and more doors. Accessibility from room to room is key.

Keep in mind administrative space. More than likely, a medium-sized room will be needed for management and accountants.

When laying out the kitchen, be sure to include enough space for a prep area. This will need to be nearly the size of your actual kitchen.
