Select a wire cheese slicer that best fits your block of cheese. Some wire cheese slicers accommodate only a six inch rectangle piece of cheese, while other slicers are meant for cutting a large block of Parmesan that is more than two feet wide.

Place the cheese in the slicer if you are slicing a small block. If you are cutting a large block of Parmesan with a long wire cheese slicer, make sure the slicer is on a stable working place like a kitchen counter or a butcher block

Gauge how thick you would like to slice your cheese. For snacking or cheese platters, a quarter inch slice is best. If you are slicing a block of Parmesan, the first cut is usually directly down the middle.

Bring down the wire to the cheese to check the width of your cheese slice.

With a smooth and firm motion, press the wire with even pressure through the cheese until it goes completely through. If you are slicing Parmesan, you may need to wiggle the wire down through the cheese until you reach the bottom.
