Being a concerned mother, wife, and grandmother I am constantly looking for healthy and economical dishes to feed my family. Eggs are one of those wonderful ingredients that help make both possible.

Of the 20 different amino acids important for body functions, 9 cannot be produced by our bodies, and must come from our diet. All 9 of these essential amino acids are found in eggs. Eggs also are one of the few foods found to be a complete protein. By boiling the egg we retain more of the nutrition than by other cooking methods.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 6 boiled eggs
  • 1 small can of deviled ham
  • 1/2 tsp Worcestershire
  • 1/2 tsp grated onion
  • 1/2 + 1/2 tsp sea salt
  • 1/2 + 1/8 tsp dry mustard
  • 2 dashes of pepper
  • 2 tbsp half n half
  • 1 pkg. frozen broccoli
  • 1 1/2 tbsp butter or oleo
  • 1 1/2 tbsp flour
  • 1/2 cup shredded cheddar
  • 3/4 cup milk
  1. Step 1

    Cut 1/4" slice from the end of the boiled, shelled eggs; carefully remove yolk.

  2. Step 2

    Mash the end slices of egg along with the yolk in a bowl. Blend in ham, Worcestershire, onion, 1/2 tsp of salt, 1/2 tsp dry mustard, a dash of pepper and the half n half. Blend well.

    Spoon into empty egg whites. Set aside.

    Cook broccoli as package label directs. Preheat oven to 400 F.

  5. Step 5

    Melt butter over low heat. Stir in flour, 1/8 tsp mustard, 1/2 tsp salt, 1 dash of pepper, and milk. Cook until thickened.

  6. Step 6

    Add in cheese, stir continually until smooth.

  7. Step 7

    Arrange broccoli in 10" x 6" x 2" baking pan. Stand eggs on top with stuffed ends up.

  8. Step 8

    Pour sauce over all. Bake uncovered for approximately 40 minutes or until bubbly. Serves 4 or 5.
