This is the time of year that I go thru my recipe box, in order to locate recipes to use for a big family Thanksgiving. Since I don't cook a feast frequently, I use this time to retest the recipes that I plan to use. This year I have already retested the baste for a juicy turkey-and I love it:

Instructions

Things You'll Need:

  • Looking for a good turkey baste
  1. Step 1

    Use a mortar and pestle to grind together the herbs and spices. If you don't have a mortar and pestle--use wax paper and a rolling pin to crush them together. Next, add the wine and lemon juice. Make sure to blend thoroughly.

  2. Step 2

    Rinse turkey, inside and out in cold water, and drain well. Use paper towels to dry the inside of the turkey. Then,brush the inside of the bird and rub the outside with the baste mixture.

  3. Step 3

    Stuff the turkey, and use the remaining mix to baste the turkey at least every 1/2, as it cooks, using either a pastry brush or a syringe type turkey baster.

Tips & Warnings
  • If you're cooking a turkey over 14 lbs. double the baste recipe, in order to have enough to keep your bird moist.
  • Try all recipes before serving to guests. If you don't like the recipe, chances are your guests won't.
