How to Marinate With Food Saver
Do your meat, fish and poultry justice with a great marinade. Depending on the cut, marinating your food could mean preparing it as much as 24 hours ahead of time. You can achieve the same results in under an hour by marinating your food in the FoodSaver. The special Quick Marinator is an accessory for this popular vacuum packaging system. It uses simple chemistry. When you remove the air in the marinating container, the pores of the meat open and absorb your marinade in minutes, instead of hours. Does this Spark an idea?

Buy or prepare your favorite marinade. The "Quick Marinator" manual has several recipes that you can use for meat and vegetables. Download them from the FoodSaver website, if you do not have a special recipe.

Put your meats or vegetables in the Quick Marinator container. FoodSaver recommends that you leave at least one inch of space between your food and the top of the container. If you over-pack the marinating container, the vacuum process may not work properly.

Wipe the rim of the Quick Marinator container and the lid to be sure that they are both dry.

Place the lid on the container and check that it closed properly by pressing the seams and corners.

Insert the Accessory Hose into the hole on the Quick Marinator lid and the Accessory Port on the FoodSaver. Check both ends to be sure that they fit tightly. You may need to twist them slightly for best results. If your Marinator has a large gray knob on the lid, turn it to the "Vacuum" position after inserting the hose.

Plug the FoodSaver into an outlet. Press the "Marinate Mode" button on the V3800 model. For earlier models, use the "Canister "button on the control panel. The V3800 model beeps when the marinating process ends. On earlier models, the panel lights will automatically turn off.

Remove the "Accessory Hose" and release the vacuum in the container by pressing and holding the gray button on the top of the lid. When no air escapes, you can safely open the container. If your canister has a large knob on the lid, turn it to the "Open" position to release the vacuum.

Tips & Warnings
Some Quick Marinator containers have latches that you press down to make a seal between the lid and the container. Remember to flip them up before putting the lid on the container. You can use any FoodSaver canister to marinate foods, but the square and rectangular ones require less liquid than the tall, cylinders shapes.
Keep your food refrigerated while it is marinating. Set a timer so that you do not forget to get your marinated items out of the container after 20 minutes. Do not use the Quick Marinator for food storage. Vacuum seal uncooked foods in a FoodSaver bag if you do not plan to use all of the food that you marinated.
