Things You'll Need:
- A butternut squash
- An onion
- Olive oil
- Salt and pepper
- Chicken stock

Step 1
First, take the squash and cut it into one to two inch cubes. Heat a small amount of olive oil in a pot and add the squash to the pot. Add the onion. Cook until the onion is translucent.

Add the chicken stock (about 5 cups) and bring to a simmer. Remove the solids from the soup with a slotted spoon and place in a blender. Puree the squash in the blender until it is completely pureed. You don't want any chunks left because you want the soup to go down easy.

Place the blended mixture back into the pot. Stir until cooked and add some salt and pepper to taste for seasoning. Yum, your soup with butternut squash is ready. Enjoy!
