How to Make Soup with Butternut Squash
If you are tired of cooking squash on the grill, try making a silky smooth butternut squash soup. Butternut squash soup can be especially inviting in the cold days of fall or in the winter, but it also makes a wonderful summer dish when not served hot. Serve the soup as a meal, or as a side dish. Things You'll Need
- 1 butternut squash
- 1 chopped onion
- Olive oil
- Salt and pepper
- Chicken stock
- Cooking pot
- Blender

Cut the squash into 1- to 2-inch cubes. Heat a small amount of olive oil in a pot and add the squash. Add the chopped onion. Cook until the onion is translucent.

Add about 5 cups of chicken stock and bring to a simmer. Remove the solids from the soup with a slotted spoon and place in a blender. Puree the squash in the blender until it is completely pureed.

Place the blended mixture back into the pot. Stir in some salt and pepper to taste for seasoning and serve.
