Apple Oat-Bran Muffin will be great for your next breakfast. Try the recipe I found from Dr Weil's.
According to NutraSanus, "Oat bran is the edible, outermost layer of the oat kernel. Oats have been recognized as a food and an herb. Like oatmeal, oat bran contains B complex vitamins, protein, fat, minerals, and heart healthy soluble fiber. When eaten regularly, oatmeal and oat bran may help to lower total cholesterol levels by 25 or more within a very short time period (one to three months). In addition, oat bran can help to reduce the bad LDL and raise levels of good HDL cholesterol. Many moms have learned that most families like oat meal or oat bran."

We also know that oat bran has great health benefits for the diabetic. Oats are known to reduce blood glucose and insulin responses. Those are 2 big parts of being a diabetic.

Instructions

Things You'll Need:

  • 2 large green cooking apples
  • 2 cups whole-wheat pastry flour
  • 1 cup unbleached white flour
  • 1 1/4 cups oat bran
  • 2 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 12-ounce can apple juice concentrate, thawed
  • 1 cup water
  1. Step 1

    Pre-heat your oven to 325° F. Lightly oil muffin pan with olive oil. Peel and core apples; chop them coarsely. Set aside

  2. Step 2

    In a mixing bowl, stir together the dry ingredients; sifted pastry flour, sifted white flour, oat bran, baking soda, cinnamon, and nutmeg.

  3. Step 3

    Add the thawed (unsweetened) apple-juice concentrate, chopped apples, and enough water to make a light batter.
    Don't over mix, mix just enough to moisten all ingredients. Pour batter in muffin tin and bake till lightly browned, 25-30 minutes.

  4. Step 4

    Remove muffins from cups while hot. And enjoy!
