A turkey fryer is a large deep-fat fryer consisting of a burner and a large stock pot with lid. Many turkey fryers also include a removable perforated basket which can be used for frying or steaming smaller items such as shrimp. Using this large fryer for shrimp is a good way to fry large quantities of shrimp at one time, perfect for entertaining guests or cooking for a party.

Difficulty: Easy
Instructions

Things You'll Need:

  • Cooking oil
  • Turkey fryer
  • Perforated steamer basket
  • Egg
  • Ice water
  • Flour
  • Shrimp
  • Oven mitt
  • Paper towels
  1. Step 1

Pour enough peanut oil or canola oil into the turkey fryer to fill it approximately six inches. For safety reasons, you should never fill the turkey fryer more than halfway full with oil. Place the perforated steamer basket into the turkey fryer.

  2. Step 2

Turn the fryer on and heat the oil to 350 degrees.

  3. Step 3

Mix together one large egg, 1/2 cup ice water and one cup of flour for each pound of shrimp you are frying.

  4. Step 4

Dredge thawed shrimp in the mixture and then gently drop the shrimp into the hot oil in one pound batches.

  5. Step 5

Cook the shrimp for approximately one minute and then use an oven mitt to lift the steamer basket by the attached handle out of the turkey fryer. Empty the shrimp onto paper towels to drain.

  6. Step 6

Replace the steamer basket and repeat the process to cook the remainder of the shrimp.

Tips & Warnings
  • Make sure that the shrimp are completely thawed before you attempt to fry. Frozen shrimp can cause the hot oil to bubble and spit which could cause burns. Do not ever walk away from a turkey fryer while it is turned on. The high temperature of the fryer can cause the oil to ignite quickly and cause serious damage to any surrounding structures.
