      Soak approximately two cups of wood chips in a metal bowl filled with water for at least an hour before you are ready to cook. Hickory is the classic choice for adding smoke flavor to pork and beef. Cedar is often used with salmon and other saltwater gamefish, while apple infuses a mellower flavor in delicate foods such as trout. Try mesquite for chicken and wild game.

      Raise the lid on the Blue Embers Grill and remove the cooking grate on the left-hand side to locate the cast-iron smoker box underneath.

      Drain pre-soaked wood chips from the metal bowl and add to the smoker box

      Replace the cooking grate on the grill.

      Ignite the grill and close the lid to pre-heat for cooking

      Add food to the grill and cook according to your recipe while the smoker box heats the wood chips, which will produce aromatic smoke.
