How to Fry Snapper
Fried snapper is a delicious dish that comes in many forms. Things You'll Need
- For the Buttermilk Fry:
- 3 cups corn meal
- 1 cup all-purpose flour
- Celery salt (optional)
- Paprika (optional)
- Dry mustard (optional)
- 3 snapper filets
- 1 cup buttermilk

- For the Stir Fry:
- 2 large bell peppers
- 2 garlic cloves, sliced
- Cooking oil
- 1 sliced celery stalk (optional)
- 1 sliced ginger root (optional
- For the Matzo Meal Fry:
- Lime juice, squeezed from 3 limes
- 2 chopped scallions
- 1 teaspoon salt
- 1 teaspoon sliced garlic
- 2 large red snapper filets
- 1 cup matzo meal

How to Fry Snapper in Buttermilk

Make a dry mix for the batter with 3 cups of corn meal, 1 cup all-purpose flour and your favorite spices. Soul Food and Southern Cooking (see reference 2) suggests paprika, dry mustard and celery salt.

Dip the red snapper filets in the buttermilk until they're fully coated. Drop in the dry mixture and turn several times. Remove when the batter is evenly spread over the surface of each filet.

Pour oil into a large skillet until the bottom is covered. Turn the stove to medium heat and wait until the oil is hot.

Fry the snapper, making sure to flip it occasionally. Each filet should remain in the oil for about two to three minutes. Remove when both sides are golden brown and serve.

Cut the snapper into small chunks. You want them to be bite-sized, but not so small that the snapper will break up in the wok.

Slice the peppers and garlic. According to Thai Food Plus, you should customize these ingredients as desired. You can also add celery or sliced ginger.

Pour the oil in a wok. Set the stove on high heat and wait until the oil is bubbling. Add all ingredients.

Cut the snapper into bite-sized chunks. Again, these should be bite-sized but resistant to disintegration.

Mix lime juice, scallions, salt and garlic in a bowl. Drop the snapper chunks into the bowl and move them around to coat them. Cyber Kitchen suggests that you then place the chunks in the fridge and allow them to marinade for 15 minutes.

Pour enough oil in a large skillet to cover the bottom. Set the burner at medium heat, wait until the oil is hot, then add the marinated snapper chunks.
