How to Fry Snapper

Fried snapper is a delicious dish that comes in many forms. Whether mixed with peppers for a traditional Thai stir fry or fried in buttermilk for a Southern treat, this versatile fish is a tasty alternative to fatty meats and blander varieties of fish.   • 1 cup all-purpose flour

      Make a dry mix for the batter with 3 cups of corn meal, 1 cup all-purpose flour and your favorite spices. Soul Food and Southern Cooking (see reference 2) suggests paprika, dry mustard and celery salt.

      Dip the red snapper filets in the buttermilk until they're fully coated. Drop in the dry mixture and turn several times. Remove when the batter is evenly spread over the surface of each filet.

      Pour oil into a large skillet until the bottom is covered. Turn the stove to medium heat and wait until the oil is hot.

      Fry the snapper, making sure to flip it occasionally. Each filet should remain in the oil for about two to three minutes. Remove when both sides are golden brown and serve.
