You can easily make Chicken Lo Mein very inexpensively.

If you have a taste for Chicken Lo Mein but balk at the thought of patronizing a high-priced restaurant, you can do very well making it yourself at home for a mere fraction of the cost. It is possible to serve four at a cost of about $1.20 per serving, making your total cost about $5 for the entire dinner (see Resources).

        Get your ingredients. Cut 1 lb. of boneless, skinless chicken breast into thin slices. Have the rest of your ingredients at hand: sesame oil, a garlic clove, teriyaki sauce, freshly grated ginger or powdered ginger, a package of chicken flavored Ramen noodle soup and a bag of frozen mixed Oriental vegetables.

        Heat the oil in a large skillet over medium-high heat until hot. Add chicken and cook, stirring frequently, until no longer pink. Add vegetables and lid. Cook until vegetables are cooked through, about five minutes. In the meantime, cook the noodles without the flavoring packet according to package directions. Drain. Add soy sauce, garlic, ginger and seasoning packet to the water. Mix well. Pour over the chicken and vegetables, add noodles and toss to mix.

        Split the food into four servings. You can add a side of fried rice if you like and put a pot of Oriental tea on the table for a true Chinese meal.
