Roasting is a simple way to cook your squash before adding it to a main dish. Eat the roasted squash alone or toss into your favorite tomato sauce or curry sauce. You can even puree it for baby food. Does this Spark an idea?

  • Butternut squash
  • Olive oil
  • Salt and pepper
  • Large sharp knife
  • Glass baking dish

Instructions

      Preheat the oven to 350 F.

      Slice the butternut squash in half lengthwise. The outer skin is very tough, so be careful not to cut yourself. Use a spoon to scoop out the seeds and flesh strands.

      Drizzle the bottom of a glass baking dish lightly with olive oil. Place the butternut squash halves flesh-side down in the dish and move them around to coat with the olive oil.

      Move the squash to the counter or cutting board, flesh-side up. Sprinkle lightly with salt and pepper.

      Return the squash, flesh-side down, to baking dish. Pop into the oven and roast 45 minutes.

      Remove from the oven and let the butternut squash cool completely before using your fingers to peel away the tough outer skin.
