How to Easily Roast Butternut Squash

Here's a simple way to cook your squash before adding it to a main dish!

Instructions

Things You'll Need:

  1. Step 1

    Pre-heat your oven to 350 degrees F.

  2. Step 2

    Slice the butternut squash in half lengthwise. Go slow because the outer skin is very tough and you don't want to cut yourself by accident.

  3. Step 3

    Now take a spoon and scoop out the seeds and flesh strands.

  4. Step 4

    Take your glass baking dish and lightly drizzle with olive oil.

  5. Step 5

    Place your butternut squash halves flesh-side down in the dish. Make sure to move each halve around in the oil so it's nicely coated.

  6. Step 6

    Grab each half and place flesh-side up on a cutting board. Sprinkle lightly with salt and pepper.

  7. Step 7

    Replace the halves, flesh-side down in baking dish.

  8. Step 8

    Pop into the oven and roast for 45 minutes.

  9. Step 9

    Let the butternut squash cool completely before proceeding.

  10. Step 10

    With your fingers, peel the tough outer skin from the butternut squash.

  11. Step 11

    Now you have a cooked butternut squash! Eat alone or toss into your favorite tomato sauce or curry sauce. You can even puree it for baby food.
