Step 1
Ingredients:
Left over Turkey with at least 2 cups of meat left.
Turkey carcass
Left over bread stuffing.
Left over mashed potatoes.
Left over cooked vegetables, i.e. peas, carrots, corn.
Left over gravy.
1 large onion
1 large carrot -
Step 2
Starting the Soup:
Cut turkey into large diced chunks. Set Aside.
Place the turkey carcass into a large soup pot and cover with water.
Add onion and carrot.
Add leftover gravy.
Add stuffing and mashed potatoes.
Bring to a boil and then turn down to a simmer.
Let this simmer for an two hours.
Remove from heat and let the soup cool down.
Remove carcass from broth and pick all meat off.
Strain the soup. -
Step 3
Add to the the broth:
Chunks of Turkey
Chopped up onion and carrot from step 2.
Cooked vegetables that you have leftover.
Bring to a boil and then let this simmer for 30 minutes stirring occasionally.
Serve with nice hot bread!
