How to Make Vegetarian Taco Soup

Things You'll Need

  • Stock Pot
  • Knife
  • Wooden Cooking Spoon
  • 1 Can Crushed Tomatoes
  • 1 Onion
  • 1 Can Re-fried Beans
  • 1 Packet or 3 Tbs Taco Seasoning
  • 1/4 Cup Fresh Salsa
  • 1 Cup Water
  • 1 Tbs Garlic Powder
  • 1 Tbs Black Pepper
  • 2 Cups Cheddar Cheese
  • Sour Cream
  • Tortilla Chips
  • 2 Tbs Olive Oil

  1. Vegetarian Taco Soup

    • 1

      Put stock pot on stove over medium heat. Pour oil into pot. Chop onions into small pieces (about the same size as the chunks in whatever salsa you're using) and cook for 6-8 minutes, stirring frequently.

      Once onions have cooked, add can of crushed tomatoes and water. Stir. Add taco seasoning, garlic, pepper and salsa. Raise heat to high and bring soup to a boil, stirring frequently. Once soup boils, lower heat again to medium and add re-fried beans. Stir until bean mixture dissolves.

      Simmer soup for 10 minutes. Turn heat off. Take 1 1/2 cups of cheddar cheese and stir into soup.

      Spoon soup into bowls. Dab some sour cream in the center of soup and top with a sprinkle of cheddar cheese and tortilla chips.

Tips & Warnings

  • If you're not into vegetarian cooking, you can always add about 1/4 pound of ground beef to the soup. Fresh salsa can be found in the produce section of your local supermarket. If you want more flavor, add chopped jalapeno when you add onion.
