  • 3 ripened bananas
  • 2 eggs
  • 1 cup oil
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp. baking soda

Instructions

      Peel and slice the bananas removing the ends.

      Puree the bananas in a blender.

      Add eggs and oil to the banana and blend until well combined.

      Combine flour, salt, baking soda and sugar in a mixing bowl.

      Stir the banana mixture from the blender into the bowl of dry ingredients.

      Pour the ingredients into a greased loaf pan. Tap the pan gently on a hard surface to remove air bubble that may exist.

      Cook for about 45 minutes in an oven that is preheated to 350 degrees F. To check if the bread is done insert a toothpick into the center, and if it comes out clean it is done.

      Cool completely, slice and serve.

Tips & Warnings

  • You can stir nuts into the mixture before adding to the pan to add additional texture and taste. Pecans or walnuts work well.
