How to Make Pork Fillets With Beetroot and Sour Cream Sauce

- 1 ½ lb. boneless pork tenderloin
- 2 whole cooked beets, diced
- ½ cup sour cream
- 2 tbsp. vegetable oil
- 6 oz. chicken wings
- 4 cups water
- White onion, chopped
- Celery stick, chopped

Preheat the oven to 350 degrees F. Heat the vegetable oil in a large pan and add the chicken wings. Fry for 5-7 minutes or until they are golden brown on all sides, turning regularly. Add the water, onion and celery and bring to the boil. Reduce the heat and simmer on low for 75 minutes. Skim off any fat on top of the stock and strain into a clean pan or pitcher.

Sear the pork in a large frying pan in the oven, fat side down for 3-5 minutes.

Transfer to a roasting pan and cook in the oven until tender, about 40 minutes depending on the particular piece of meat. Reserve the cooked pork on a warm serving plate until needed.

Drain the fat from the roasting pan and add the stock. Bring to a boil on top of the stove, stirring constantly to deglaze the pan. Add half of the beetroot and sour cream to the pan and bring to the boil. Strain the mixture into a blender or food processor and blend the mixture until smooth.

Pour the sauce on the bottom of warmed individual serving plates. Slice the pork and place two slices on each plate. Scatter the remaining beetroot over the top and serve.

Tips & Warnings
Choose a piece of meat that has a little more fat on it than you would usually select. This will add greatly to the flavor of this dish considering the cooking technique.
