Plan well in advance. The easiest way to do a wild-game banquet is to make it a potluck, with everyone bringing a dish. Line up volunteers in advance to help with the banquet.

Assign salads, side dishes, bread, drinks and deserts among the attendees. A system based on last name works well. For example, families with last names beginning with A to F can bring salads, G to L side dishes, etc. You will want to ask the hunters in the group to bring their favorite wild-game dish.

Fill in the gaps. The group's hunters might not be able to supply enough meat. You might have to find other hunters and ask for donations. Remember to find a variety of wild-game meats.

Cook the donations. A wild-game cookbook comes in handy at this point. These can be found at a local book store. Fried rabbit and squirrel usually are a big hit as well as deer medallions made from the backstraps. There are also animals some people would never dream of eating such as raccoon and possum.
